CHEF | Micaela Markides
BIO: Chef Micaela “Mic” is a dedicated culinary professional with a 4 year, honors culinary arts degree from the University of Pretoria in S. Africa. Her two passions are food and fitness with emphasis on nutrition to compliment her commitment and expertise in both disciplines. This also enables her to adapt well to different dietary requirements. Mic grew up with Greek-Cypriot heritage and loves to incorporate this influence in her cuisine but has extensive experience in Asian, Mexican, Italian, Vegetarian and Patisserie. While she has worked ashore in 5 star catering, Mic has been drawn to the intimate and unique environment that yachting has for creating beautiful food. Opportunities around the world are often what stimulate Mic’s creativity both for learning new styles as well as refining her own. Most recently, she was an essential part of successfully opening two new restaurants in Thailand from menu creation and kitchen design to staff training as Head Chef. Her yachting career has included both private and charter yachts from 25-50m around the world and she is excited to be a memorable part of guests’ experience aboard MY HALCYON.

BIO: Shannon, a 27-year-old South African, is the Chief Stewardess on board M/Y Halcyon, where she has been a crew member for nearly three years. With a background in Graphic Design and experience in advertising, Shannon made the leap into yachting to blend her service industry expertise with her love for travel. 2ND STEWARDESS | Amy Whitcombe
BIO: Amy is a confident, adventurous, and outgoing individual who embarked on a life-changing journey when she moved to the United States at 19 to work as an Au Pair for a family with four boys. Over two years, Amy not only formed strong bonds with the children but also took the opportunity to extend her knowledge, completing short courses in marketing, photography, and interior design. Although she enjoyed working with the children, it was the behind-the-scenes aspects of household management, cleaning, and service that truly captured her passion. Amy made the decision to transition into the yachting industry, where her love for service and attention to detail could grow. With nearly two years of experience in yachting, Amy has developed a deep understanding of the demands and rewards of the industry. She is driven by a desire to grow in her career and is determined to one day achieve her goal of becoming a Chief Stewardess.
FIRST OFFICER | Tristian James Wille
South African
BIO: Raised in Grahamstown, South Africa, Tristian left his small hometown immediately after finishing school and began his career in yachting. He started based in Cape Town where he was able to work alongside his studies before going on to work a season in Spain and then Fort Lauderdale. As a child, Tristian grew up very familiar with boats, learning to drive a dinghy from his father at a young age and was always fishing, wake surfing, wake boarding and skiing. Everything came very natural to him which is a big reason as to why he joined yachting, considering it almost as a hobby.
DECKHAND | Darreth Scott
South African
BIO: At just 22 years old, Darreth Scott brings a lifetime of coastal experience and a passion for the sea to the yacht charter industry. Growing up on South Africa’s picturesque Eastern Cape, Darreth was immersed in the oceanic lifestyle from an early age. Living just steps away from the beach, he embraced surfing as a daily ritual and honed his skills in the waves. His dedication to water safety led him to become a lifeguard at the local beach, where he developed a deep understanding of maritime conditions and safety protocols. Driven by his ambition, Darreth is determined to advance his career in yachting and aspires to captain a charter boat, blending his love for the sea with his professional aspirations.
